- 1 can chickpeas
- 1 small onion, finely minced
- 2-3 cloves garlic, minced
- 3 tblsp chopped parsley
- 3/4 tsp lemon juice
- 1 tsp olive oil
- 1 tsp coriander
- 1/4 tsp turmeric
- dash of red pepper sauce
- salt and pepper to taste
- 2 tblsp flour
- Drain and rinse the chickpeas and place in a medium bowl. Mash them with a fork then add the rest of the ingredients and stir well until everything is evenly combined.
- Form into balls about the size of a ping-pong ball and then flatten them a little. Either fry them in a little coconut oil until they’re golden brown or bake them in a preheated oven at 375 F until they’re golden brown, turning them over about halfway.
- Serve in a wholemeal pitta with whatever falafel toppings you like. Try hummus, lettuce, tomato and red pepper.
