Celebrate National Chocolate week with this pudding that won’t send your blood sugar rocketing.
Luscious Chocolate puds
(makes 4-8 depending on size of your ramekins)
400ml coconut milk
200g dark chocolate
dash of vanilla extract
Melt the chocolate gently in the coconut milk, add the vanilla and whisk for a couple of minutes. Pour in to ramekins and set in the fridge.
Try putting some fresh raspberries in the ramekins before covering with the chocolate – delicious!
