Easy Falafel

Serves 3-4
  • 1 can chickpeas
  • 1 small onion, finely minced
  • 2-3 cloves garlic, minced
  • 3 tblsp chopped parsley
  • 3/4 tsp lemon juice
  • 1 tsp olive oil
  • 1 tsp coriander
  • 1/4 tsp turmeric
  • dash of red pepper sauce
  • salt and pepper to taste
  • 2 tblsp flour
  1. Drain and rinse the chickpeas and place in a medium bowl.  Mash them with a fork then add the rest of the ingredients and stir well until everything is evenly combined.
  2. Form into balls about the size of a ping-pong ball and then flatten them a little. Either fry them in a little coconut oil until they’re golden brown or bake them in a preheated oven at 375 F until they’re golden brown, turning them over about halfway.
  3. Serve in a wholemeal pitta with whatever falafel toppings you like.  Try hummus, lettuce, tomato and red pepper.
